Black Bean Chili



1 cup rice, brown or white

1lb chopped meat

2 cans black beans, undrained

1  16 oz can diced tomato

1 8 oz can tomato sauce

1 packet chili seasoning


start cooking the rice.


heat skillet to hot, spray with cook spray (off heat), place meat in the skillet, add the 2 cans of black beans, the tomato sauce, diced tomato and seasoning packet.  stir well to combine, bring to a boil, lower heat and let simmer, while rice is cooking.


when rice and chili is cooked, you can serve with any or all of the following:  2 scallions diagonally sliced into thin slices, grated cheddar cheese, low fat sour cream or yogurt, sliced iceberg lettuce, chopped tomato, sliced black olives. 


this recipe can be extended by adding more rice, and more of the toppings.
