Chinese Meatballs
These
are sooo good that I can’t believe I haven’t shared them with you before.
Serve
these meatballs with rice, white is best but brown is ok. green vegetable like steamed string beans
sprinkled with sesame seed oil or broccoli with sesame seed oil. Of course if
you can get snow peas that is the best.
1
lb 93% lean ground beef
1
teaspoon ground cloves
1
teaspoon ground ginger
1
teaspoon garlic powder
2
tablespoons ketchup
2
tablespoons soy sauce
2
teaspoons honey
2
tablespoons water
½
cup dry bread crumbs
leave
meat on counter until almost room temperature, mix in with rest of the
ingredients. leave the mixture to
marinate for up to overnight or as little as no time! Form into 1” balls.
½
teaspoon ground cloves
½
teaspoon ground ginger
½
teaspoon garlic powder
¼
cup ketchup
¼
cup soy sauce
¼
cup honey
¼
cup water
Place
the meatballs in a hot skillet sprayed with cook spray, cook until light brown
all over, add the mix of spices, ketchup, soy sauce, honey and water and add to
the meatballs, bring to a boil, cover, lower heat to very low and cook for
about 40 mins. Every 10 mins or so pour
sauce over the meatballs with a spoon. Keep adding water as needed so there is
at least ½ cup of liquid in the skillet.
If on the other hand there is too much liquid in the skillet at the end
of cooking time, remove the meatballs, reduce the liquid to about ½ a cup.
While
the meatballs are cooking make your rice and vegetables.
Enjoy
this meal, have some ice cream for desert.
If you are in a rush, raise the heat under the meatballs so that they
cook a little bit faster.
Serves
4 very nicely.
