Corned Beef Hash
I use Hormel brand corned beef. I think it has the least amount of fat. This is a dinner I make when I have not taken meat out of the freezer to thaw and cant’ really think what I want to make for dinner.
It takes only minutes to prepare especially if you use frozen home fries instead of doing everything from scratch.
serves 4 (add some soup and fruit and desert and you can stretch this to 6 servings)
2 cups ½” cubed baking potato
2 cups ½” diced onion
1 cup ½” diced red pepper
1 can Hormel corned beef
¼ cup minced parsley
ground black pepper
2 teaspoons vegetable oil
2 teaspoons bacon drippings (optional)
eggs, one or two per person as needed
dice potato, cover with cold water and cook for 15 mins after the water comes to a boil or until the potatoes are tender, not mushy.
Heat a large skillet on high heat, spray with cook spray and add oil to the skillet. When the oil it hot, add the onions and let alone until the bottoms get golden, then stir and add the red pepper and sauté a few more minutes.
Shove the onion mixture to the side and add well drained potato cubes on to the skillet and let sit for 5 mins or so until the bottoms of the potatoes are golden and crusty. Stir and let cook for several minutes more. then add the can on corned beef into the skillet, break up the lumps and let sauté for about 5 mins before stirring and letting it all cook some more till the corned beef is sort of crusty.
Serve hash with poached or fried eggs on top and a salad and crusty bread on the side. ketchup and or hot sauce, salt and pepper are all accompaniments we like.
