Pasta with Canned Salmon
1 16 oz can salmon, drained, liquid reserved
1 medium onion diced (1 ½ cups)
1 jalapeño pepper finely minced (optional)
3 cloves of garlic finely minced
¼ cup chopped parsley
½ cup ketchup
2 teaspoons bacon fat or olive oil
1 lb box of spaghetti or your favorite pasta shape except angel hair
lots of fresh ground black pepper
start the pasta cooking. should be cooked to be slightly less done as you generally like it.
heat a large skillet on medium high heat. when heated turn off stove and spay cook spray in the skillet. turn heat back on and add the bacon fat or oil of your choice. add the diced onion, garlic and jalapeno to skillet and stir fry till golden. add the drained salmon, breaking up into about pea size pieces while stirring till slightly golden. add the ketchup and mix well. add the drained pasta and the reserved salmon liquid and stir to mix. add the parsley.
serve with bread and a salad. will serve 4 to 6.
if you are in a super rush, just the onion, salmon and kepper with pasta makes this a great dish.
