Vegetables and Cod

easy, fast, light, inexpensive and oh so tasty!


1lb cod fillets cut into 4 to six equal pieces

3Tablespoons butter

1cup medium diced onions

1 ½ cups grated carrots

1 cup finely sliced celery

1 Tablespoon chopped fresh parsley

¼ cup of water

½ teaspoon cayenne pepper

salt and pepper to taste


melt butter on a medium high heat in a medium sized skillet.

add all the chopped vegetables and sauté till tender.

remove all but about 1 cup of the vegetable mixture.  spread evenly in the bottom of the pan.  place the fish on top of the vegetables.  cover with the rest of the vegetables.  add ¼ cup of water, cover skillet, lower the heat to low and simmer for about 15 mins.


serve over steamed rice or spaghetti.  add a salad and some garlic bread to serve 3 to 4.
