Peanut Sauce

use this sauce in many things.  i love it over rice or on crackers, i add a little hot sauce to the peanut mix.  this is also good on steamed vegetables or even raw vegetables.

1 (3-inch) piece ginger, grated or chopped fine

1/2 cup rice wine vinegar

1 tablespoon soy sauce

1 lime, juiced

2 tablespoons sesame oil

1/2 cup peanut butter

1/2 teaspoon ground black pepper

1 serrano chili, minced fine

mix all together and use as a dipping sauce or a sauce to drizzle on shredded cold poached chicken or on cold pasta mixed with blanched or lightly cooked veges to be vibrant and crunchy, vegetables such as asparagus, broccoli, green beans, snow pea pods, uncooked but cut up tomato, scallions, shredded cabbage, carrot.  use any of these that appeal to you.  finely minced cilantro and or mint is a good herb to use with this sauce.
