serves 2 to 4
you can use cooked left over turkey or chicken or you can pick up a
biq chicken to use for this recipe. this is a great
summertime salad too. dinner
will be ready in about 15 mins!

tablespoons sour cream or cream fresh (use fat free if you wish)

tablespoons mayonnaise (use fat free if you wish)

tablespoons lime juice

tablespoon honey

teaspoon curry powder
salt and pepper to taste

cups cubed cooked turkey

cup cubed celery
1
cup cubed carrot
2
cups cubed apple (1 apple is fine)
3
cups torn/cut romaine lettuce, or use your favorite greens

cup chunked red onion
mix all dressing ingredients (sour cream to salt and pepper) in the
bottom of the salad bowl.
place the rest of the ingredients in the salad bowl and toss
well. serve
with bread of your choice.

can asparagus drained, reserving liquid
2 cups broth. chicken or turkey
is good

tablespoons minced onion

teaspoon butter

teaspoon curry powder
salt and pepper to taste
drain the asparagus well. sauté onion in the butter, add the drained asparagus and the
broth and the seasoning and bring to a boil, lower heat and cook 10 mins or
so. puree the
mixture, add the reserved liquid if you wish to have a looser soup or need to
stretch it.
